My husband's recipe is a cure all for the chilly's the willy's and everything in between!
What you need:
2 tablespoons olive oil
1 cup diced onion ( chopping them for me is true love!)
1/2 teaspoon minced garlic
2 cups diced celery
2 cups cut up carrots
2 cups cubed cooked chicken breast
8 cups gluten free chicken broth ( our go to is Imagine!)
1 tablespoon gluten free dijon mustard
Pepper ( salt if you must) to taste
2 cups cooked brown rice
Heat oil in large saucepan.
Saute ( fancy) onions/ garlic.
Add celery/ carrots until tender
Add remaining ingredients and cook on low for 5 mins.
Chris then puts everything in a large pot and warms for 30 mins or so. YUM!!!
